Carrot Cake Protein Balls

These make the perfect afternoon snack - full of protein, healthy fats and fibre to give you an afternoon energy boost! This recipe makes around 10 balls. 


Ingredients

  • 60g ground almonds

  • 50g oats

  • 25g pecans

  • 1 medium carrot, grated

  • Zest from 1 orange

  • 1 tsp cinnamon

  • 1 tbsp maple syrup

  • 2 tbsp sesame seeds


Place the oats and pecans in a food processor and mix to a fine consistency. Add the rest of the ingredients (except the sesame seeds) and mix until you get a dough. Roll into balls about the size of a golf ball and then roll in the sesame seeds. Store in the fridge and have 1-2 balls for a snack.
